  After I upload A zip file I need to be able to extract it. How do I do this with Fetch, or can you even do that?

  No, you can't do that with Fetch. If you can ssh to your server you can unzip the file on the command line. Otherwise, you would need to unzip it on your Mac and upload it unzipped.
