Clicking on the title of the "Name" column will sort the file list by name. On OS X you can click again to reverse the sort order. Also, there are two options in the Misc. section of Preferences that affect sorting: "Use case-sensitive sorting" sorts all the files that start with an upper case letter separately from the ones that start with a lower case letter, and "Use folders first sorting" sorts all the folders together at the top of the list.
I should also note that Fetch's sorting is not strictly alphabetical. Like the file name sorting in the Finder, it treats numbers in a file name numerically. So "file9.txt" sorts before "file10.txt", even though "1" comes before "9" alphabetically, because 9 comes before 10 numerically.

Mac os x, and 9, can t figure out how to make files appeare in the menu in alphabetical oreder.
