  I may know the answer, but needed to confirm.
  If I upgrade my current 5.3(2 licenses) and 5.5 (3 licenses), I will no longer be able to enter into the older Fetch on the computers until the upgrade is loaded?
  Or, I can continue to use the older version until the newer version is installed?

  Yes, you can keep using the older version until the newer version is installed.

  Note that you do not need to purchase an upgrade for your 5.5 licenses; those serial numbers will still work with Fetch 5.7.
